Chocolate Salami
CHOCOLATE salami is an Italian and Portuguese dessert made from cocoa, broken biscuits, butter, eggs and sometimes alcohol such as port wine or rum.
250g dark chocolate
60g butter
30ml Amaretto liqueur
100g shortbread biscuits, chopped 50g dried cranberries
50g pistachio nuts
50g red glacé cherries, halved 50g green glacé cherries, halved icing sugar for rolling
Combine the chocolate and butter in a bowl and place over hot water.
Leave until the chocolate and butter have melted. Mix until smooth.
Remove bowl from the water and fold in the remaining ingredients. Set the mixture aside until it starts to cool and thicken.
Pile the mixture into a log shape in the centre of a sheet of cling film.
Wrap the mixture up, twisting the ends together to form a neat log. Refrigerate until hard and set.
Remove the cling film and roll the log in plenty of icing sugar.
