Panforte

PANFORTE is a traditional chewy Italian dessert containing fruit and nuts. It is known in Italy as a Christmas tradition.

100g macadamia nuts, lightly toasted 100g hazel nuts, lightly toasted 75g pistachio nuts

300g dried fruit (apricots, figs, cranberries)

5ml ground cinnamon

2ml ground cloves

2ml ground nutmeg a good grinding of black pepper 90g flour

15ml cocoa powder pinch of salt

180g honey

180g castor sugar rice paper icing sugar for sifting

Combine the nuts, fruit, spices, flour cocoa and salt in a bowl.

Combine the honey and castor sugar in a small saucepan and heat gently until the sugar has dissolved. Bring to a simmer and simmer for 2 to 3 minutes. Add to the fruit mixture and mix well.

Line 2x18cm cake pans with a disc of rice paper.

Spoon the mixture between the two pans and press down with the back of an oiled spoon. Bake at 150°C for 20 to 30 minutes until firm to the touch. Remove and cool in the pan. Run a knife around the edge of the pan while the mixture is still warm for easy removal from the pan.

Sift over the icing sugar to decorate, and wrap in cellophane if giving it as a gift.

Rice paper is available at most supermarkets in the baking section or at speciality food shops.
