Naan Khataay
1 and ½ cups ghee (clarified butter) 2 cups castor sugar
2 tsp baking powder
2 cups flour
¼ tsp elaichi powder flaked almonds Cream the ghee and castor sugar well together. Add all the other ingredients.
Shape into small balls (about 5cm in diameter and 1cm thick).
Press down with a piece of flaked almond. Bake at 190°C for 5 minutes.
Turn down to 150°C and continue baking for a further 20 minutes.
◆ Use whole almonds, or coloured sliced ones. I prefer the flakes.
