Mint And Orange Brittle

50g granulated sugar

50g water

zest of 1 orange

6 mint leaves, finely chopped

Place the sugar and water in a stainless steel sauce pot.

Simmer on a low heat until the sugar is hard (the syrup will turn a golden brown).

Oil a sanitised counter top. Pour the hot syrup on to the counter top and spread it evenly in a thin layer.

Sprinkle the orange zest and mint evenly on top of the brittle.

Allow to cool completely and then lightly tap it to shatter the brittle.

Store in an airtight container with some sugar at the bottom to prevent the brittle from sweating.
