Delicious Cumin Flavoured Yellow Split Pea Cakes

THESE yellow split peas cakes are perfect for lazy spring days. Yellow peas are full of protein and packed with other health benefits. They are a great option if you are trying to eat less meat, or just looking for something new to try.

2 cups Crossbow Yellow Split Peas 1 onion, grated

1 red chilli, finely chopped

1 tsp chopped parsley

½ tsp cumin

1 egg salt and pepper, to taste

1 cup bread crumbs oil for frying

Cook the split peas according to the package instructions. Once they are cooked, mash them up with a fork, transfer to a large bowl and set aside to cool.

Add the onion and parsley to the bowl with the split peas. Then add the cumin. Season with salt and pepper.

Next, add the egg and breadcrumbs. Stir everything together.

Heat the oil in a pan on mediumhigh heat.

Form the mixture into patties and cook for 4 to 5 minutes on each side, working in batches.

Serve with yoghurt and mint sauce or tartar sauce. |
